About Our Crispy Sisig
Sisig began as a way of using every part of the pig, and it has ended up as the loudest plate on any Filipino table. Ours is chopped fine, fried hard so the edges crisp, then cut with a creamy sauce and green chiles that keep the richness in check.

What Makes Our Crispy Sisig Special
We fry it to order rather than holding it on a warmer, which is the difference between crisp edges and soft ones. Squeeze the calamansi over the top before you start, and ask for extra chilli if you want it hotter.
