About Our Tocilog
Tocilog is tocino plus sinangag plus itlog, and the whole plate depends on the first of those. Our tocino is cured in house, so the sweetness comes from a real cure rather than a sauce poured on at the end, and it caramelises properly in the pan.
Because we open at 7:00 AM every day, tocilog is a genuine breakfast at Kalan rather than an all-day novelty. It is one of the reasons guests describe the food here as tasting like home cooking rather than restaurant cooking.
What Makes Our Tocilog Special
The garlic rice is fried to order in the pan the tocino came out of, which is where the flavour comes from. Ask for spiced vinegar on the side — the sharpness is the traditional balance to the sweet cured pork.
