About Our Chicken Adobo
What makes adobo work is patience. The vinegar goes in and is left alone to cook off its sharpness, the soy carries the salt, and the garlic and bay do the rest over a long, low simmer. We make it in batches through the day so the sauce is never over-reduced by the time it reaches the line.
